WHere is a home-style take on a drink found on the seasonal cocktail list. It's a batch pre-mixed which is loaded with tastes of a festive period, making it excellent for hosting a holiday party. Reserve the remaining syrup you can use for breakfast cocktails, desserts, or for more rounds of the drink.

Serves 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
Making the Cordial: Combine all the components into a saucepan, bring to a simmer, stirring until the sugar dissolves. After that, take off the burner allowing it to cool entirely. Decant into an sealable bottle, cap it and refrigerate it in the refrigerator, it can be stored for up to a month.
To make Premix: Pour all the liquids into one large bottle, let it rest for 60 minutes, then strain best through muslin, to ensure it's perfectly clear.
To serve: Pour 85ml from the premix into your mixing glass packed with ice, and stir carefully for a minute to cool it down. Strain into an frosted cocktail glass or similar, decorate with the cranberries adding the final touch with a brief mist of mandarin oil over the top.
